About St. JOHN

Fergus Henderson and Trevor Gulliver opened St. JOHN in Smithfield in 1994.

The area was run down and only alive at night when the meat market was in working, even the late night pubs did not make the area an attractive proposition for folk. Eventually the meat market did survive the culls of the developers, regeneration spread and today Smithfield and Clerkenwell are busy places. Our building, a listed grade II Georgian townhouse, had been squatted, used for raves, the basement for growing bean shoots, the offices of Marxism today where here one time, and so on.

It was empty and derelict in part when we took it on. we have kept the building true to the spaces we found, the ground floor being the St. JOHN folk know and above we have have offices, including those of the wine department, and some accommodation.

In 2003 Fergus and Trevor opened St. JOHN Bread and Wine in Spitalfields and moved the bakery there. Our baking was moved to Druid Street in late 2010 but our breads and other produce are still available over the pastry counter in the bar every day.
